Tl;dr Watch this short explanation.
Simulation sickness is a form of motion sickness experienced while playing video games. Some people don't react well to seeing movement they don't actually feel (camera movement in a game). Possible symptoms: discomfort, dizziness, headaches, increased heartrate, fatigue, sweating, nausea.
I can't play any first-person games. 2D games are perfect if I can turn off screenshake, motion blur and smooth/delayed camera movement. 3D games are a bit tricky. I need to be able to adjust the camera even more. AAA third-person games usually don't work for me except for MMOs.
Most VR games are much worse for me than non-VR games. However, I can play games like BeatSaber because every movement in the game is a movement I actually make with my body. For example, walking, teleporting, using a lift in VR instantly triggers my simulation sickness.
I have acupressure wristbands that I use occasionally if I notice that a game gives me unexpected simulation sickness.
